Produced via 13-day skin-fermentation of Pinot Gris using indigenous Pied de Cuve yeast. A 35% saignée was pulled at 24 hours post-crush to increase concentration in the remaining must. Post pressing, the wine was aged in neutral oak for a period of 8 months and subjected to regular bâtonnage in order to enhance and refine texture.
This wine is unfiltered and unfined.
