Saignée from whole fruit fermentation of Saperavi was drawn off 3 days post-crush and allowed to ferment in stainless steel for an additional 2 days. At that time, the remaining sugar was judged to be at the desired level, and fermentation was arrested via the addition of neutral grape spirits. Then this dessert wine was finished & aged in rye whiskey barrels for 12 months.
This wine is unfiltered and unfined.
