62% of the wine was fermented in a large oak barrel (a 400L puncheon) with our pied de cuve. Another 12% was fermented in concrete using the same natural approach, helping build texture and complexity. The remaining 26% was fermented in stainless steel tanks with carefully selected yeasts, preserving freshness, purity, and bright fruit flavors.
