Winemaking Details

A light to medium-bodied, bubbly, juicy, and fruity wine with flavors of tart cherry, nutmeg, and strawberry.

A Pét-Nat without using commercial yeast and just our own wild yeast, this wine is a blend of some saignée from a Pinot Noir fermentation, and it was just the right volume. After monitoring to make sure the right volume was produced, this wine was bottled just before reaching dryness.
