A medium bodied, juicy, fruity, and earthy wine with flavors of sour cherry, baking spice, and tobacco.

Fermented with pied de cuve wild yeast culture and held on skins for 19 days prior to pressing. A 30% saignée was drawn off of the fermentation 2 days after crushing to concentrate textural and aromatic components. Post-pressing, the wine was aged in neutral French and Eastern European oak for a period of 10 months prior to bottling.

This wine is unfiltered and unfined.
