A light-bodied, bubbly, crisp, and savory wine with flavors of baked apple, poached pear, and honey. 

Produced from Nothern Spy, Jersey Chisel, and Major are heritage bittersweet apple varieties that bring textual components to this blend that are not as prevalent with common dessert apples. Following the Primary fermentation, the cider was re-inoculated and bottled to achieve carbonation and left undisgorged.
